What Twin Eagles is known for

Twin Eagles is a Southern California company (Cerritos) with a reputation for heavy-gauge stainless, tight fit and finish, and features borrowed from commercial kitchens. Beyond the grills, the lineup includes side burners, power burners, refrigeration, storage and the piece that tends to start conversations: the salamander.

A salamander is an overhead broiler. Twin Eagles' version uses infrared burners above an adjustable rack, so heat comes down onto the food the way it does under a restaurant broiler. It's great for finishing steaks, melting cheese and browning. Because it cooks from above, grease spatters upward and outward, so it needs its own cleaning attention.

The grills themselves typically pair conventional burners with infrared options (sear and rear rotisserie burners), lighted controls, and electronic ignition on many models, which means the island needs a working outlet.

What we see on Twin Eagles equipment

  • Ignition faults. Clicking without lighting, or one burner that won't catch. Often a dirty or misaligned electrode, a cracked insulator, or a power problem at the outlet or transformer. See grill won't light.
  • Infrared burners damaged by water. Ceramic infrared faces that got sprayed during cleaning, or sat full of rainwater, can crack and light patchily. Covered at infrared burner repair.
  • Salamander grease buildup. The rack area, back wall and drip pan load up quickly and can smoke.
  • Lighting. Knob and interior lights that go out.
  • Rotisserie motors and spit hardware. Usually from sitting unused.

How we clean it

For the grill: grates and flame tamers come out, burners get pulled and ports cleared, and the firebox is scraped and degreased with a biodegradable cleaner. The grease path gets emptied and cleaned. For a salamander, we remove the rack and drip pan, clean the interior walls and the area around the burners without soaking the ceramic, and check that each burner lights fully. The surrounding stainless gets wiped with the grain. Drop cloths go down first, and rinse water is collected and hauled away. If your island has more equipment, our outdoor kitchen service covers it in the same visit.

Parts and tags

Parts for current Twin Eagles models are generally available, and because the company is local, lead times are often reasonable. Older pieces can take more checking. Have the model and serial number ready if you can; the rating label is usually inside the unit, visible with the drip tray pulled or behind a front panel, and our model number guide covers where to look.

Twin Eagles questions

Can you clean and repair a Twin Eagles salamander?

Yes. We clean the interior and drip pan, check the infrared burners and ignition, and replace parts where needed.

Is it OK to use oven cleaner on my salamander?

We wouldn't. Caustic oven cleaners are hard on stainless and can damage ceramic burner faces. A food-safe degreaser on the pan and walls, kept off the burners, is safer.

Are you a Twin Eagles service center?

No. Surefire is an independent, insured grill service company. Warranty repairs go through Twin Eagles; we handle cleaning and out-of-warranty work.

How often should a salamander be cleaned?

If you use it regularly, empty and wipe the drip pan after every few uses, and have it cleaned properly once or twice a year along with the grill.
